Pancakes - Better Homes and Gardens Cookbook


1 cup all purpose flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
1 cup milk
a splash of vanilla
2 Tbsp cooking oil.

Stir together flour, sugar, baking powder and salt.  In another bowl, combine the egg, milk, vanilla and oil.  Add egg mixture to dry mixture.  Stir till just moistened. 

Buttermilk variation:  prepare pancakes as stated, except reduce baking powder to 1 tsp and add 1/4 tsp baking soda to dry mixture.  Substitute buttermilk for milk.

Dan's Cinnamon Rolls


Mix together:
2 cups flour
2 Tbsp sugar
4 tsp baking powder
1 tsp salt

Cut in 3 Tbsp cold butter.  Then stir in 3/4 cup milk. 

Roll to 1/4" spread.  Spread some room temp butter on dough. 

Mix together 1/2 cup sugar and 1 1/2 tsp cinnamon.  Put about 2/3 of sugar mixture on dough.  Mix the rest of the cinn/sugar with some butter and put in bottom of 9x9 square pan.  Cut dough into pieces and place in pan.  Bake at 400 for 20-25 minutes. 

Glaze: powdered sugar and milk.

Pumpkin Spice Pancakes

1 1/4 cup flour
2 Tbsp brown sugar
2 tsp baking powder
1/4 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
dash of ginger
dash of cloves
1 cup milk
1/2 cup pumpkin puree
1 egg
2 Tbsp oil

Mix dry ingredients.  Mix wet ingredients in a separate bowl and then combine together.

Sour Cream Coffee Cake - Aunt Barb

1 cup butter, softened
1 cup sugar
2 eggs
1 tsp vailla
1 cup sour cream
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Filling:
1/3 cup sugar
1/4 cup brown sugar
1 tsp cinnamon
3/4 cup walnuts, chopped

Cream butter and sugar.  Add eggs, vailla and sour cream.  Mix well.  Add dry ingredients.  Spread 1/2 in a ungreased pan.  Mix together fililng.  Spoon half of filling over batter.  Drop remaining batter by Tbspfull over filling layer.  Spoon remaining filling over top of batter.  Bake 35 minutes at 350 degrees.

Banana Roll

Recipe from Ashleigh Baker




Cake -

1 cup banana, mashed
1 cup sugar
1 1/8 cup flour
1 1/2 tsp baking soda
4 eggs
1 1/2 tsp vanilla

Filling -

Makes enough for 2 rolls
1 stick of butter
1 cup powdered sugar
1/2 tsp vanilla

Prepare jelly roll pan for baking.  (crisco and wax paper)
Mix all cake ingredients, pour into pan and bake for 12-15 minutes at 350 till toothpick comes out clean and cake feels "spongy" to the touch.  Let cool 5 -10 minutes.  Roll in powedered sugared paper towels.
Beat together filling ingreditnes.  Fill roll.  Sprinkle top with powdered sugar.

Zucchini Muffins

3 cups flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1 tsp cinnamon
2 cups sugar
3 eggs, beaten
1 cup oil
1 tsp vanilla
2 cups grated zucchini
1/2 cup (heaping!) sour cream
1 cup chopped nuts, or some choc chips

Mix dry ingredients.  Thoroughly mix in the rest of the ingredients.  Bake at 350 for around 25 minutes.  Test with a toothpick.

Apple Streusal Muffins

1/3 cup butter
2 Tbsp brown sugar
2 Tbsp sugar
1 egg
2 cups flour
4 tsp baking powder
1/4 tsp cinnamon
1 cup milk
1 cup apples, peeled and diced small
1/4 cup nuts, chopped
1/2 tsp salt

For the streusel mixture:
1/2 cup brown sugar
2 Tbsp flour
2 Tbsp butter, melted
2 tsp cinnamon

Cream together butter and sugars. Add eggs and blend.  Mix together dry ingredients.  Add to creamed mixture, alternating with milk.  Fold in apples and nuts.  Spoon into muffin tins, about 1/3 full.  Add 1 tsp of streusel mixture.  Then add remaining batter.  Sprinkle top with remaining streusel mixture.  Bake at 375 for around 20 minutues or till they test done with a toothpick.

Apple Cheese Breakfast Cookies

2/3 cup butter, softene
1/3 cup packed brown sugar
1 egg
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1/1/2 cups oats (quick or old fashioned
3/4 cup flour
1 cup shredded cheddar cheese
1 cup finely chopped apple

Combine butter, sugar, egg and vanilla.  In another bowl, mix together flour, cinnamon, baking powder, salt.  Combine those 2 mixtures together.  Add oats and cheese, mix well.  Stir in apple.  Drop by heaping tablespoonfull onto a ungreased cookie sheet.  Bake at 375 for 15 minutes, or until golden brown.  Store in a tightly covered container in fridge or loosely covered container at room temp.

Raspberry Stuffed French Toast with Vanilla Custard

  • 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
  • 1/2 cup sugar
  • 2 tsp. vanilla
  • 1 tsp. ground cinnamon
  • 2 whole eggs
  • 2  egg whites
  • 1-1/4 qt. (5 cups) fat-free milk, divided
  • 1 loaf French bread baguette (16 oz.), ends trimmed, cut into 18 slices
  • 1 pkg. (12 oz.) frozen unsweetened raspberries, divided
  • 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
  • BEAT first 4 ingredients in large bowl with mixer until blended. Add whole eggs and egg whites, 1 at a time, mixing well after each. Gradually beat in 2 cups milk.
  • ARRANGE 9 bread slices on bottom of 13x9-inch baking dish sprayed with cooking spray; cover with half the berries and remaining bread slices. Pour Neufchatel mixture over bread. Let stand 30 min.
  • HEAT oven to 350°F. Bake French toast 40 min. or until golden brown. Meanwhile, bring remaining milk just to boil in saucepan; gradually add dry pudding mix, whisking 2 min. until blended. Remove from heat; let stand 5 min. Meanwhile, microwave remaining raspberries in small microwaveable bowl on HIGH 15 to 20 sec. or just until warmed.
  • SPOON pudding over individual servings of French toast; top with berries.

Quiche with Bacon, Spinach, Mushroom and Fontina

Ingredients:

1 pie crust, rolled out and fitted into a 9″ pie pan   (GRANDMA'S PIE CRUST)
3 eggs, beaten
1 1/2 cups milk
1 Tbsp oil
1 medium onion, minced
8 oz mushrooms, sliced
1 bag (6 oz) baby spinach
6 strips bacon, cooked and crumbled
1 1/2 cups Gruyere cheese, shredded  (I use fontina)
1 tbsp flour
Salt & Pepper, to taste

Directions:
Preheat the oven to 400°F. Bake the pie crust for 5-7 minutes, until very lightly browned. Remove from oven and reduce oven to 325°F.

Meanwhile, in a large saute pan, heat the oil over medium-high heat. Saute the mushrooms and onions for about 5 minutes. Add the spinach and saute until the spinach is wilted. If there is a lot of extra moisture in the pan, drain the vegetable mixture.

In a large bowl, stir together the eggs, milk, onion, bacon, spinach, mushrooms, and salt. In a separate bowl, toss the cheese and flour together. Add the cheese to the rest of the ingredients and mix well. Pour into your partially baked pie crust and bake 45-55 minutes, until set. Let it cool for about 20 minutes before slicing. It can be served warm or at room temperature.

Peanut Butter Chocolate Chip Cake

Ingredients
  • 2 & 1/4 cups all-purpose flour
  • 2 cups light brown sugar
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup semisweet chocolate chips
Instructions

Preheat oven to 350°. Coat a 9″x 13″ baking pan with cooking spray. Set aside.
Using an electric mixer, combine flour, brown sugar, peanut butter, and butter. Remove 1 cup of mixture and set aside.
Mix in baking powder and baking soda. Mix in milk and vanilla. Add eggs, 1 at a time, mixing well after each addition.
Transfer batter to prepared pan. Sprinkle top with reserved flour mixture and chocolate chips. Bake 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Cheddar Bacon Wake Up Casserole

(Country Home Magazine)

4 oz dry french or sourdough bread, cut into 3/4 inch cubes.  (4 cups)
1 1/2 cups shredded cheddar cheese
4 slices bacon, cooked and crumbled (or 1 cup diced cooked ham)
2 cups mlk
4 eggs, lightly beaten
2 Tbsp fresh parsley
1/4 tsp ground black pepper
1/8 tsp onion powder

In a large bowl, toss together the bread cubes, cheddar cheese and cooked bacon or ham.  In a bowl, whisk together milk, eggs, parsley, pepper and onion powder.  Pour over the bread mixture.  Cover and refrigerate at least 8 hour or up to 24 hours.  Bake, uncovered in a 350 degree oven for 40 minutes or till knife inserted near center comes out clean.  Let stand 5 minutes before serving.

Mom's Sausage Gravy

1 lb sausage, browned
8 Tbsp flour
1/2 stick butter
1/2 tsp salt
sprinkle of pepper
4 cups milk. 

Brown sausage. Add in flour and butter.  Mix till mixed in all the way.  Add salt and pepper.  Lastly, add in the milk.  Let heat and simmer, mixing frequently till thickened.

Amazing Breakfast Casserole

This recipe I found online didn't really have a name, so I named it.  And it truly is amazing.  : ) 


4 slices of bread, cubed (sourdough works really well!)
12 eggs
1 cup sour cream
3 green onions, chopped (reserve the green tops for garnish on top)
1 lb. ham, cut into very small cubes
1 cup milk
1 1/3 cups grated cheddar cheese, divided

Spread bread cubes evenly in bottom of a 9x13 baking dish.  Cut ham into cubes.  Cover bread with ham.  In a large bowl, beat eggs, milk and sour cream until smooth.  Stir in 1 cup of cheese and onions.  Pour mixture over ham.  Top with 1/3 cup cheese and the tops of the green onions.  Bake, uncovered at 325 for 45 minutes or until knife inserted in the center comes out clean and casserole has "puffed" up.  Let stand 10 minutes before serving. 

(As with most breakfast casseroles, this one just about always takes longer then the recommended bake time.  I usually bake it with plenty of time to spare and then just cover it to keep it hot.)
