Banana Pecan Pancakes



2 eggs
2 cups all purpose flour
2 cups buttermilk
2 cups mashed ripe bananas
1/4 cup granulated or packed brown sugar
1/4 cup vegetable oil
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup chopped pecans, toasted if desired
a couple bananas, sliced

maple-butter syrup (in a saucepan, pour in some REAL maple syrup and a few Tablespoons butter.  Let it simmer for a few minutes, while whisking)
Whipped cream, if desired
ground nutmeg, if desired

Beat eggs until fluffy.  Beat in flour, buttermilk, mashed bananas, sugar, oil, baking powder, baking soda and salt just until smooth.  Stir in pecans.

Heat griddle or skillet over medium heat.  Grease, if necessary.  Make pancakes!

Serve with sliced bananas.  Drizzle with syrup!
