Sarah's Pie Crust

2 1/2 cups flour
1 tsp salt
1 tsp sugar
1 cup cold butter, cut in small pieces
1/4 cup shortening
6-8 Tbsp ice cold water

Chill the fats and water.  Mix flour, salt, sugar together.  Add your shortening and butter.  Cut fats into flour mixture.  (Aim for pea sized lumps at biggest.)  Slowly add water.  When dough holds together when you squeeze it, it is done and ready for rolling.  Divide dough and make them flat discs.  Wrap in plastic and refrigerate for an hour or more.  (You can make the dough the day before.)  If dough is too hard, you may have to let it sit out for 15-20 minutes.
