Hashbrown Casserole - adapted from Aunt Mel's recipe

2 lb pkg frozen hash browns
1/4 cup melted butter
1 pt sour cream
1 can Healthy Request cream of chicken soup
1/2 cup onion, chopped
2 cups shredded cheddar cheese
1 tsp salt
1/2 tsp pepper
2 cups corn flakes
2 Tbsp butter

Combine potatoes and butter.  Stir in sour cream, soup, onions, cheese, salt and pepper.  Place in a greased 9x13 inch dish.  Combine flakes and butter.  Sprinkle over top.  Cover with foil and bake at 350 for 20 min.  Uncover and bake 20 min more.  Sometimes it takes longer than 40 minutes to bake.
