Pork Tenderloin


 Marinade for pork:
1/2 cup olive oil
1/3 cup soy sauce
1/4 cup red wine vinegar
juice of 1 lemon
1-2 Tbsp fresh parsley, finely chopped
fresh cracked black pepper
4 cloves garlic, minced or pressed

1, 1 lb pork tenderloin

pan sauce: 1/2 cup chicken broth
2-3 Tbsp pork marinade
1 -2 tsp butter
Pan scrapings

Combine all marinade ingredients, and reserve 2-3 Tbsp for sauce.  Marinate pork for at least 3 - 4 hours.  Preheat oven to 350.  In a skillet over med/high heat, sear each side of the tenderloin for 2-3 minutes.  Place in oven, covered and cook for 40 minutes or till meat has reached 160 degrees.  Let rest at least 5 minutes.  Meanwhile, add broth to pan and scrape up the brown bits.  Add marinade and reduce for a few minutes.  Add butter.  Once pork is sliced, pour sauce over top.
