This is such a awesome potato salad! It is summery, the cucumbers give it that perfect cool crunch, and people always say..."is that dill I'm tasting?" Haha, that could have sounded like people say it in a 'that's gross' kind of way. Nope, it's in a very good way! : ) Anyways, I crave it every summer, and sometimes even make it in the winter because it is just.that.good.
The measurements are approximate...feel free to change the amounts of ingredients.
3-4 medium potatos
1/4 cup relish
1/4 tsp pepper
1 Tbsp mustard
3 hard boiled eggs
2 celery stalks - finely diced
1/4 cup finely diced cucumber
dill - to taste GIVE IT ENOUGH DILL! That's part of what makes this salad amazing! : )
1/2 tsp salt - taste and see what is good
around 3/4 cup Helmanns mayo
Boil potatoes whole for about 20 minutes - 1/2 hour. Peel while hot, cut into chunks. Mix all ingredients together while the potatoes are still warm.
