Spinach Strata

1 loaf french bread, cubed  (Probably use a little less than the whole loaf)
2 pkgs frozen chopped spinach, thawed and squeezed dry
3/4 lb provolone cheese, chopped
14 large eggs
2 1/2 cups milk
salt and pepper, to taste - (Maybe 1 tsp of salt and a sprinkle of pepper)
3/4 lb cheddar cheese, shredded
Grease a 9x13 inch baking dish.  Make a single layer of bread cubes in bottom of baking dish.  Cover bread evenly with spinach.  Add chopped provolone cheese.  Top with another layer of bread cubes. 

In a medium size mixing bowl, whisk together the eggs, milk and seasonings.  Pour over the layers evenly, making sure that the whole top layer is moistened.  Bake for 1 hour at 350.  Don't take out of the oven until it is puffed up some and a bit golden brown.  To test, insert knife in center and make sure it comes out clean.  Top with cheddar cheese, and put back in the oven to finish melting.
