Apple Cheese Oat Breakfast Cookies

3/4 cup flour
2/3 cup butter, softened
1/3 cup packed brown sugar
1 egg
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups Quaker oats (quick or old fashioned)
1 cup shredded cheddar cheese
1 cup finely chopped apple

Combine butter, sugar, egg and vanilla.  Beat.  In another bowl, mix flour, cinnamon, baking powder and salt.  Combine 2 mixtures together.  Add oats and cheese.  Mix well.  Stir in apple.  Drop by heaping tablespoons onto a ungreased cookie sheet.  Bake at 375 for 15 minutes or till golden brown.  Store in a tightly covered container in fridge or loosely covered container at room temp.
