I first had this recipe at a friend's graduation party. The recipe that I had for it though was to serve about 60 people. I cut the recipe down and may have tweaked it here and there.
Chicken Romano
3 chicken breasts, cut in half
3 eggs
2 Tbsp Romano cheese, grated
1/4 tsp garlic
1 1/2 sticks butter
6 Tbsp Romano cheese
1/2 tsp garlic powder
a few squirts of lemon juice - to taste
Whip together eggs, 2 Tbsp of Romano and garlic. Dip chicken in egg mixture and brown on both sides in a frying pan. Transfer to a glass baking dish. Bake at 350 for approximately 30 minutes or until chicken is cooked through.
While chicken is baking - in a sauce pan, melt butter, remaining cheese, garlic powder and lemon juice together, stirring frequently.
When chicken is done, spoon sauce over chicken.
It MUST be served with really good bread. One of my favorite things about this meal is soaking up the extra sauce with bread. Yum!
